The delicious two-day festival at Oban’s Corran Halls returns next month with a fine platter of food and drink from across the region from Mull to Skipness, Lochgilphead to Tighnabruaich to satisfy foodies with good taste.
Helpings of food, fun, workshops and entertainment are on the menu for this second-ever annual event looking set to becoming a firm fixture on the Argyll calendar, brought to the table by Food From Argyll.
This week we bring you a wonderful recipe from Emma Goudie at Islay Cocoa
This is a Cross between Brownie and Cookie. Crisp cookie on the outside with fudgey inside. Naturally gluten free, using cornflour and GF baking powder. Recipe appears in New Scottish Baking book by Sue Lawrence.
Ingredients
350 g dark chocolate 70% cocoa solids best quality you can buy.
50 g butter
225 g caster sugar
80 g cornflour
1 tsp baking powder
3 eggs
1 tsp vanilla extract
100 g dark chocolate chips
Sea Salt flakes - I use local Orsay Sea Salt from Islay.
Method
1. Break up the chocolate into a bowl and add the butter. Microwave or Melt over pan of simmering water until chocolate and butter has melted together.
2. In a stand mixer or with a hand mixer beat the eggs, vanilla and caster sugar together until light and frothy.
3. With mixer running slowly pour in the chocolate until combined. Add the cornflour and baking powder and mix briefly until just combined.
4. Cover bowl with clingfilm and refrigerate for at least 1 hour.
5. Use a scoop or tablespoon and roll into balls. Place on baking sheets lined with parchment, press each lightly on the top, pressing in a few chocolate chips, sprinkle with a little sea salt, ensure space between for spreading during cooking.
6. Cook in a preheated oven at 180 oc. Bake for 13-15 mins. Remove from oven and cool slightly before removing from tray to cooling rack. The Brookies should have a cracked hard shell with soft middle.
